Poached
Salmon
Serves 4
1/2 cups white wine
1/2 cup water
1 onion, sliced
1 tablespoon chopped fresh
flat-leaf parsley
1 teaspoon dill weed
1/4 teaspoon ground black pepper
1 1/2 pounds salmon
1 lemon, sliced
In a large saucepan or skillet, combine white wine, water,
onion, parsley, dill weed and pepper. Bring to boil, cover
and reduce heat. Simmer for 10 minutes.
Add salmon, cover, and simmer for 8 minutes, or until the
salmon flakes easily. Garnish with lemon.
